Problems with carrier ?

Can we have or get into any problems/trouble for switching the imei to a phone other then an iphone because of the requirement of the iphone plan ? I dont want to lose cell service.
I dont know if they can tell the difference in data usage over a regular phone or the iphone 3g. It is their mistake for disabling mms, so i dont think that we should have to suffer but i dont know if they can tell by usage on the media max unlimited. I worry about everything...lol
